Savarin is a pastry that was created in France in the 19th century, by the Julien brothers, who wanted to pay tribute to the French gastronome and writer Brillat-Savarin.
This cake takes the form of a crown and is made from baba pastry (without sultanas), then soaked in a kirsch syrup.
Savarins are usually topped with crème pâtissière or Chantilly cream, fresh fruit or candied fruit.
