Le Savarin est une pâtisserie créée en France au XIXe siècle par les frères Julien, qui souhaitaient rendre hommage au gastronome et écrivain français Brillat-Savarin.
Ce gâteau prend la forme d’une couronne et est réalisé à partir de pâte à baba (sans raisins secs), puis imbibée d’un sirop de kirsch.
Les savarins sont généralement garnis de crème pâtissière ou de crème Chantilly, de fruits frais ou de fruits confits.
